Ingredients
1 cup Greek yogurt (or dairy-free yogurt alternative)
1/2 cup cucumber, peeled, seeded, and grated
1 small garlic clove, minced
1 tsp fresh lemon juice
1 tbsp extra virgin olive oil
1 tsp fresh dill, chopped
Sea salt & black pepper, to taste
Directions
Grate cucumber and squeeze out excess water using a clean towel or paper towel.
In a bowl, combine yogurt, cucumber, garlic, lemon juice, olive oil, and dill.
Season with salt and pepper to taste.
Chill for at least 15 min to let flavors meld.
