CHEESY ENCHILADAS


Ingredients

  • 1 lb grass-fed bison or ground beef

  • 1/2 white onion, diced

  • 1/3 packet Siete mild taco seasoning

  • 8 Siete almond flour tortillas

  • Siete enchilada sauce

  • Goat mozzarella, pepper jack or gouda cheese, shredded


Directions

  1. Preheat the oven to 350°F.

  2. Prepare the filling:

    1. Heat a little avocado oil or olive oil in the pan.

    2. Sauté 1/2 diced white onion until softened.

    3. Add the ground bison or ground beef and sprinkle in 1/3 packet of Siete mild taco seasoning.

    4. Cook until the meat is fully browned.

  3. Prepare the baking dish:

    1. Pour about 1/4-1/2 cup of Siete enchilada sauce into the bottom of a glass baking dish, spreading it so the entire bottom is coated.

  4. Assemble the enchiladas:

    1. Add a small layer of cheese to each tortilla.

    2. Spoon in some of the meat and onion mixture.

    3. Roll each tortilla and place it seam-side down in the baking dish.

  5. Top the enchiladas:

    1. Pour 1 cup of Siete enchilada sauce evenly over the rolled tortillas.

    2. Add a generous layer of cheese on top.

  6. Bake:

    1. Bake for 25-28 minutes.

    2. Switch to broil on high for about 3 minutes, until the top becomes crispy and golden.
