CHEESY ENCHILADAS

Ingredients
1 lb grass-fed bison or ground beef
1/2 white onion, diced
1/3 packet Siete mild taco seasoning
8 Siete almond flour tortillas
Siete enchilada sauce
Goat mozzarella, pepper jack or gouda cheese, shredded
Directions
Preheat the oven to 350°F.
Prepare the filling:
Heat a little avocado oil or olive oil in the pan.
Sauté 1/2 diced white onion until softened.
Add the ground bison or ground beef and sprinkle in 1/3 packet of Siete mild taco seasoning.
Cook until the meat is fully browned.
Prepare the baking dish:
Pour about 1/4-1/2 cup of Siete enchilada sauce into the bottom of a glass baking dish, spreading it so the entire bottom is coated.
Assemble the enchiladas:
Add a small layer of cheese to each tortilla.
Spoon in some of the meat and onion mixture.
Roll each tortilla and place it seam-side down in the baking dish.
Top the enchiladas:
Pour 1 cup of Siete enchilada sauce evenly over the rolled tortillas.
Add a generous layer of cheese on top.
Bake:
Bake for 25-28 minutes.
Switch to broil on high for about 3 minutes, until the top becomes crispy and golden.
