ROSEMARY & GARLIC CRISPY FRIES


Ingredients

  • 4 medium russet potatoes

  • 3 tbsp avocado oil

  • 1 tsp sea salt

  • 1/2 tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp dried rosemary (or 1 tbsp fresh, finely chopped)


Directions

  1. Prep the potatoes:

    1. Wash and peel (optional) the potatoes.

    2. Cut into think sticks (1/4-inch thick) for classic fries.

  2. Soak for crispiness:

    1. Place cut potatoes in a bowl of cold water for 30 minutes.

    2. Drain and pat completely dry with a clean towel.

  3. Season:

    1. In a large bowl, toss potatoes with avocado oil, salt, pepper, garlic powder, onion powder, and rosemary until evenly coated.

  4. Bake:

    1. Preheat oven to 425 degrees.

    2. Spread fries in a single layer on a parchment-lined baking sheet.

    3. Bake for 25-30 minutes, flipping halfway through, until golden brown.

  5. Broil for crisp finish:

    1. Switch oven to broil (high).

    2. Broil fries for 4-5 minutes, watching closely, until edges are crispy.

  6. Serve:

    1. Remove from oven, sprinkle with a touch more salt if desired, and serve hot.
