ROASTED JAPANESE SWEET POTATOES

Ingredients

  • 2-4 Japanese sweet potatoes

  • 1-2 tbsp olive oil or grass-fed butter

  • Sea salt & pepper

  • Optional flavor add-ons:

    • Cinnamon

    • Smoked paprika

    • A drizzle of tahini


Directions

  1. Preheat oven to 425 degrees.

  2. Cut potatoes into 1-inch cubes.

  3. Toss with 1 tbsp olive oil or butter and a pinch of salt and pepper.

  4. Spread on a baking sheet lined with parchment paper.

  5. Roast 25-35 minutes, flipping halfway, until edges are browned and caramelized.
