ROASTED BEETS

Ingredients
Roasted Beets
1 1/2 lbs beets (red or golden), scrubbed and trimmed
2 tbsp extra virgin olive oil
Sea salt & black pepper
Feta Crème Fraîche
1/2 cup crème fraîche
1/4 cup feta cheese, crumbled
1 tbsp fresh lemon juice
1 small garlic clove, finely grated
Vinaigrette
1 1/2 tbsp extra virgin olive oil
1 tbsp red wine vinegar
Pinch of sea salt
Directions
Roast the Beets
Preheat oven to 400 degrees.
Wrap beets loosely in foil with olive oil, salt and pepper.
Roast 45-60 min, until fork-tender.
Cool slightly, peel, and cut into wedges.
Make the Feta Crème Fraîche
Blend or whisk crème fraîche, feta, lemon juice, and garlic until smooth and creamy.
Adjust salt as needed.
Finish & Assemble
Arrange warm or room-temperature beets on a platter.
Spoon or swoosh feta crème fraîche over or beneath the beets.
Drizzle with olive oil and red wine vinegar.
Finish with a light pinch of salt.
