QUINOA BREAKFAST BOWL


Ingredients

  • 1 cup cooked quinoa

  • 2 large eggs

  • 1 tbsp grass-fed butter or olive oil

  • 1/2 red bell pepper, thinly sliced

  • 1/2 green bell pepper, thinly sliced

  • 1/2 small onion, thinly sliced

  • 2 green onions, chopped (for garnish)

  • Salt & pepper, to taste

  • Optional: pinch of smoked paprika or chili flakes


Directions

  1. Cook the Quinoa

    1. If making fresh: rinse 1/2 cup dry quinoa, then simmer in 1 cup of water with a pinch of salt until fluffy (about 15 min).

  2. Sauté the Veggies

    1. Heat a skillet over medium heat with 1/2 tbsp butter or olive oil.

    2. Add sliced peppers and onions. Cook 5-7 minutes until softened and slightly caramelized.

    3. Season lightly with salt and pepper.

  3. Fry the Eggs

    1. In the same or separate pan, heat the remaining butter/oil.

    2. Crack in eggs and fry sunny side up.

    3. Sprinkle with salt and pepper.

  4. Assemble the Bowl

    1. Divide quinoa into two bowls.

    2. Top with sautéed peppers and onions.

    3. Place a fried egg on each bowl.

    4. Garnish with chopped green onions and optional paprika/chili flakes.
