QUINOA BREAKFAST BOWL

Ingredients
1 cup cooked quinoa
2 large eggs
1 tbsp grass-fed butter or olive oil
1/2 red bell pepper, thinly sliced
1/2 green bell pepper, thinly sliced
1/2 small onion, thinly sliced
2 green onions, chopped (for garnish)
Salt & pepper, to taste
Optional: pinch of smoked paprika or chili flakes
Directions
Cook the Quinoa
If making fresh: rinse 1/2 cup dry quinoa, then simmer in 1 cup of water with a pinch of salt until fluffy (about 15 min).
Sauté the Veggies
Heat a skillet over medium heat with 1/2 tbsp butter or olive oil.
Add sliced peppers and onions. Cook 5-7 minutes until softened and slightly caramelized.
Season lightly with salt and pepper.
Fry the Eggs
In the same or separate pan, heat the remaining butter/oil.
Crack in eggs and fry sunny side up.
Sprinkle with salt and pepper.
Assemble the Bowl
Divide quinoa into two bowls.
Top with sautéed peppers and onions.
Place a fried egg on each bowl.
Garnish with chopped green onions and optional paprika/chili flakes.
