ORGANIC CHOCOLATE PB TRUFFLES


Ingredients

  • 1/2 cup organic cacao powder

  • 1/2 cup organic peanut butter (or almond butter)

  • 3 tbsp raw honey (adjust for sweetness)

  • 2 tbsp grass-fed butter, softened

  • 2 tbsp organic coconut oil, melted

  • 1/4 cup organic pre-soaked pecans, finely chopped

  • 1/4 cup organic coconut flakes (unsweetened)

  • 1 tsp organic vanilla extract

  • Pinch of sea salt


Directions

  1. Prepare the base:

    1. In a medium bowl, mix peanut butter or almond butter, honey, softened butter, melted coconut oil, vanilla, and salt until smooth and creamy.

  2. Add cacao powder:

    1. Sift in the cacao powder and stir until a thick, fudgy mixture forms.

  3. Fold in pecans:

    1. Stir in the chopped pre-soaked pecans for crunch and added richness.

  4. Chill the mixture:

    1. Place the bowl in the refrigerator for 30-40 minutes until firm enough to roll.

  5. Shape truffles:

    1. Scoop small spoonfuls and roll into balls with your hands.

  6. Coat with coconut flakes:

    1. Roll each truffle in organic coconut flakes to create a delicate outer layer.

  7. Set & serve:

    1. Chill the finished truffles for another 15 minutes before serving.


*Tips

  • For a richer chocolate flavor, add an extra tbsp of cacao powder.

  • If you prefer smoother truffles, blend the pecans into a paste before mixing.

  • Store in an airtight container in the fridge for up to 1 week or freeze for longer.
