ORGANIC CHOCOLATE PB TRUFFLES

Ingredients
1/2 cup organic cacao powder
1/2 cup organic peanut butter (or almond butter)
3 tbsp raw honey (adjust for sweetness)
2 tbsp grass-fed butter, softened
2 tbsp organic coconut oil, melted
1/4 cup organic pre-soaked pecans, finely chopped
1/4 cup organic coconut flakes (unsweetened)
1 tsp organic vanilla extract
Pinch of sea salt
Directions
Prepare the base:
In a medium bowl, mix peanut butter or almond butter, honey, softened butter, melted coconut oil, vanilla, and salt until smooth and creamy.
Add cacao powder:
Sift in the cacao powder and stir until a thick, fudgy mixture forms.
Fold in pecans:
Stir in the chopped pre-soaked pecans for crunch and added richness.
Chill the mixture:
Place the bowl in the refrigerator for 30-40 minutes until firm enough to roll.
Shape truffles:
Scoop small spoonfuls and roll into balls with your hands.
Coat with coconut flakes:
Roll each truffle in organic coconut flakes to create a delicate outer layer.
Set & serve:
Chill the finished truffles for another 15 minutes before serving.
*Tips
For a richer chocolate flavor, add an extra tbsp of cacao powder.
If you prefer smoother truffles, blend the pecans into a paste before mixing.
Store in an airtight container in the fridge for up to 1 week or freeze for longer.
