Lemon herb chicken w/ Quinoa tabbouleh

Ingredients
2 large chicken breasts
1 tbsp olive oil
1 lemon (zest & juice)
2 garlic cloves
1 tsp dried oregano
1/2 tsp sea salt & pepper
1 cup quinoa (uncooked)
1 1/2 cups bone broth
1 cucumber, diced
1 cup cherry tomatoes, halved
1/2 cup fresh parsley, chopped
2 tbsp fresh mint, chopped
2 tbsp EVOO
Juice of 1/2 lemon
Directions
Marinate chicken in olive oil, lemon juice, zest, oregano, garlic, salt and pepper for at least 30 minutes.
Grill or pan-sear chicken 5-6 minutes per side until cooked through.
Cook quinoa in bone broth. Let cool.
Mix quinoa with cucumber, tomatoes, parsley, mint, olive oil, and lemon juice.
Slice chicken and serve over quinoa tabbouleh.
