COASTAL GREEK DILL SALAD W/ FETA

Ingredients
Grilled Chicken
1 lb chicken breast or tenderloins
2 tbsp olive oil
1/2 fresh lemon, juiced
1 tsp dried oregano
1 tsp cumin
1/2 tsp sea salt
1/4 tsp black pepper
Salad
4 cups tender romaine lettuce
2 tbsp fresh dill, finely chopped
2 scallions, thinly sliced
1/4 cup feta cheese, crumbled
Lemon-Olive Oil Dressing
3 tbsp extra virgin olive oil
1/2 fresh lemon, juiced
Pinch of sea salt
Directions
Grill the Chicken
Toss chicken with olive oil, lemon juice, oregano, salt, and pepper.
Grill over medium heat for 4-5 min per side, until cooked through.
Rest 5 min, then slice
Build the Salad
Add lettuce to a large bowl.
Sprinkle with dill and scallions.
Add sliced grilled chicken on top.
Dress & Finish
Drizzle with extra virgin olive oil and fresh lemon juice.
Season lightly with salt and toss gently.
Finish with crumbled feta mixed in with a generous amount.
