COASTAL GREEK DILL SALAD W/ FETA

Ingredients

  • Grilled Chicken

    • 1 lb chicken breast or tenderloins

    • 2 tbsp olive oil

    • 1/2 fresh lemon, juiced

    • 1 tsp dried oregano

    • 1 tsp cumin

    • 1/2 tsp sea salt

    • 1/4 tsp black pepper

  • Salad

    • 4 cups tender romaine lettuce

    • 2 tbsp fresh dill, finely chopped

    • 2 scallions, thinly sliced

    • 1/4 cup feta cheese, crumbled

  • Lemon-Olive Oil Dressing

    • 3 tbsp extra virgin olive oil

    • 1/2 fresh lemon, juiced

    • Pinch of sea salt


Directions

  1. Grill the Chicken

    1. Toss chicken with olive oil, lemon juice, oregano, salt, and pepper.

    2. Grill over medium heat for 4-5 min per side, until cooked through.

    3. Rest 5 min, then slice

  2. Build the Salad

    1. Add lettuce to a large bowl.

    2. Sprinkle with dill and scallions.

    3. Add sliced grilled chicken on top.

  3. Dress & Finish

    1. Drizzle with extra virgin olive oil and fresh lemon juice.

    2. Season lightly with salt and toss gently.

    3. Finish with crumbled feta mixed in with a generous amount.
