GRILLED SALMON W/ GREEK CHICKPEA SALAD


Ingredients

  • 2 wild-caught salmon fillets

  • 1 tbsp olive oil

  • 1 tsp smoked paprika

  • 1/2 tsp cumin

  • 1/2 tsp sea salt, black pepper

  • 1 can chickpeas, rinsed & drained

  • 1 cucumber, diced

  • 1 red bell pepper, diced

  • 1/2 cup cherry tomatoes, halved

  • 1/4 cup kalamata olives, chopped

  • 2 tbsp feta or goat cheese

  • Juice of 1 lemon

  • 1 tbsp fresh parsley, chopped


Directions

  1. Rub salmon with olive oil, paprika, cumin, salt and pepper.

  2. In a bowl, combine chickpeas, cucumber, bell pepper, tomatoes, olives, feta or goat cheese, parsley, olive oil, and lemon juice.

  3. Serve salmon over the chickpea salad.
