GRILLED SALMON W/ GREEK CHICKPEA SALAD

Ingredients
2 wild-caught salmon fillets
1 tbsp olive oil
1 tsp smoked paprika
1/2 tsp cumin
1/2 tsp sea salt, black pepper
1 can chickpeas, rinsed & drained
1 cucumber, diced
1 red bell pepper, diced
1/2 cup cherry tomatoes, halved
1/4 cup kalamata olives, chopped
2 tbsp feta or goat cheese
Juice of 1 lemon
1 tbsp fresh parsley, chopped
Directions
Rub salmon with olive oil, paprika, cumin, salt and pepper.
In a bowl, combine chickpeas, cucumber, bell pepper, tomatoes, olives, feta or goat cheese, parsley, olive oil, and lemon juice.
Serve salmon over the chickpea salad.
