GOLDEN OREGANO FRIES

Ingredients

  • 1 1/2 lbs potatoes (Yukon Gold or Russet), peeled or scrubbed

  • 3-4 tbsp beef tallow (for roasting)

  • 1/4 cup grated Parmesan

  • 1 tsp dried oregano

  • Sea salt, to taste


Directions

  1. Prepare the Potatoes

    1. Cut potatoes in wedges or thick fries.

    2. If frying: soak in cold water 20-30 min to remove excess starch, then pat dry.

    3. If roasting: toss directly with beef tallow, salt and oregano.

  2. Cook the Potatoes

    1. Fried Version:

      1. Heat beef tallow in a deep skillet or fryer to 350 degrees.

      2. Fry potatoes in batches until golden and crisp, about 6-8 min per batch.

      3. Drain on paper towel.

    2. Oven-Roasted Version:

      1. Preheat oven to 425 degrees.

      2. Roast on parchment-lined sheet for 30-35 min, flipping halfway, until golden and crispy.

  3. Finish with Flavor

    1. While hot, sprinkle potatoes with parmesan cheese and oregano.

    2. Toss gently to coat evenly.

    3. Serve immediately.
