FETA PASTA

Ingredients
12 oz pasta (rigatoni, penne, or ziti). Sub for brown rice if gluten free
2 cups marinara sauce or meat sauce
6 oz feta cheese, crumbled
2 tbsp olive oil
1/2 tsp dried oregano
1/4 tsp black pepper
Optional: fresh basil or parsley for topping
Directions
Cook the Pasta
Bring a large pot of salted water to a boil.
Cook pasta until just al dente.
Drain and toss lightly with olive oil.
Assemble
Preheat oven to 375 degrees.
In a large bowl, combine cooked pasta with marinara or meat sauce.
Gently fold in half of the crumbled feta.
Bake
Transfer pasta to a baking dish.
Sprinkle remaining feta evenly over the top.
Finish with oregano and black pepper.
Oven Finish
Bake uncovered for 20-25 min, until bubbling and lightly golden on top.
Optional: broil for 2-3 min for extra browning.
Serve
Rest 5 min before serving.
Garnish with fresh herbs if desired.
