FETA PASTA

Ingredients

  • 12 oz pasta (rigatoni, penne, or ziti). Sub for brown rice if gluten free

  • 2 cups marinara sauce or meat sauce

  • 6 oz feta cheese, crumbled

  • 2 tbsp olive oil

  • 1/2 tsp dried oregano

  • 1/4 tsp black pepper

  • Optional: fresh basil or parsley for topping


Directions

  1. Cook the Pasta

    1. Bring a large pot of salted water to a boil.

    2. Cook pasta until just al dente.

    3. Drain and toss lightly with olive oil.

  2. Assemble

    1. Preheat oven to 375 degrees.

    2. In a large bowl, combine cooked pasta with marinara or meat sauce.

    3. Gently fold in half of the crumbled feta.

  3. Bake

    1. Transfer pasta to a baking dish.

    2. Sprinkle remaining feta evenly over the top.

    3. Finish with oregano and black pepper.

  4. Oven Finish

    1. Bake uncovered for 20-25 min, until bubbling and lightly golden on top.

    2. Optional: broil for 2-3 min for extra browning.

  5. Serve

    1. Rest 5 min before serving.

    2. Garnish with fresh herbs if desired.
