CHIA PUDDING WITH CHOCOLATE SHELL & ALMOND BUTTER

Ingredients
For the Pudding:
1/2 cup chia seeds
1 1/2 cups full-fat coconut milk (unsweetened)
1-2 tbsp pure maple syrup or raw honey (optional)
1/2 tsp vanilla bean paste (optional)
Pinch of salt
For the Toppings:
1/4 cup dark chocolate (Just Date & Hu are good brands)
1 tsp coconut oil (for melting chocolate)
2 tbsp almond butter
1/2 cup fresh berries (blueberries, raspberries, strawberries)
Directions
Make the Chia Pudding:
In a bowl or jar, mix chia seeds with coconut milk, sweetener (if using), vanilla, and salt.
Stir well to prevent clumping.
Cover and refrigerate for at least 4 hrs.
or overnight until thick and pudding-like.
Prepare the Chocolate Shell:
Melt dark chocolate and coconut oil together in a small bowl.
Stir until smooth and glossy. Let cool slightly.
Assemble the Bowl:
Divide chia pudding into 2 serving bowls.
Drizzle almond butter over the top.
Scatter fresh berries.
Spoon melted chocolate over the top - place in fridge until the chocolate hardens. Enjoy!
