CHIA PUDDING WITH CHOCOLATE SHELL & ALMOND BUTTER


Ingredients

  • For the Pudding:

    • 1/2 cup chia seeds

    • 1 1/2 cups full-fat coconut milk (unsweetened)

    • 1-2 tbsp pure maple syrup or raw honey (optional)

    • 1/2 tsp vanilla bean paste (optional)

    • Pinch of salt

  • For the Toppings:

    • 1/4 cup dark chocolate (Just Date & Hu are good brands)

    • 1 tsp coconut oil (for melting chocolate)

    • 2 tbsp almond butter

    • 1/2 cup fresh berries (blueberries, raspberries, strawberries)


Directions

  1. Make the Chia Pudding:

    1. In a bowl or jar, mix chia seeds with coconut milk, sweetener (if using), vanilla, and salt.

    2. Stir well to prevent clumping.

    3. Cover and refrigerate for at least 4 hrs.

      or overnight until thick and pudding-like.

  2. Prepare the Chocolate Shell:

    1. Melt dark chocolate and coconut oil together in a small bowl.

    2. Stir until smooth and glossy. Let cool slightly.

  3. Assemble the Bowl:

    1. Divide chia pudding into 2 serving bowls.

    2. Drizzle almond butter over the top.

    3. Scatter fresh berries.

    4. Spoon melted chocolate over the top - place in fridge until the chocolate hardens. Enjoy!
