BURGER BOWLS W/ GARLIC & HERB FRIES

Ingredients
For the Burger Bowls:
1 lbs grass-fed ground beef, bison, or venison
1-2 cups arugula
1/2 cup satuéed onions & peppers (use 1 sliced onion + 1-2 bell peppers; sauté in avocado oil or ghee)
1/4-1/2 cup shredded grass-fed raw cheddar or crumbled goat cheese
Grillos pickles, sliced
Primal Kitchen mayo or homemade (see recipe)
Primal Kitchen sugar-free ketchup
Optional: diced tomatoes, avocado, mustard, or a fried egg
Garlic & herb fries:
2-3 medium potatoes (Yukon or sweet potatoes both work)
1-2 tbsp avocado oil
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried parsley
Salt & pepper to taste
Optional: paprika, rosemary, thyme
Directions
Make the Garlic & Herb Fries:
Preheat oven to 425 degrees.
Cut potatoes into fries and toss with avocado oil, garlic powder, onion powder, dried parsley, salt and pepper.
Spread evenly on a parchment-lined baking sheet.
Bake 25-35 minutes, flipping halfway, until crispy and golden.
Prep the Veggies:
Heat a skillet over medium heat with a drizzle of avocado oil.
Add sliced onions and peppers; cook 8-12 minutes until soft and caramelized.
Season with salt and pepper.
Cook the Meat:
Heat a skillet over medium-high.
Add the ground meat; break it up as it cooks.
Season with salt, pepper, and (optional) garlic powder or paprika.
Cook until browned.
Drain excess fat if needed.
Assemble the Burger Bowls:
Add a base of arugula to each bowl.
Spoon on the warm cooked meat.
Add sautéed onions and peppers.
Top with Grillos pickles.
Sprinkle with raw cheddar or goat cheese.
Add a swirl of Primal Kitchen mayo and sugar-free ketchup.
Serve with garlic & herb fries on the side or in the bowl.
