BONE BROTH QUINOA

Ingredients
1 cup quinoa (rinsed well)
2 cups grass-fed bone broth (chicken or beef)
2 medium shallots, thinly sliced
1 tbsp olive oil (or ghee)
1/2 tsp sea salt (adjust to taste)
1/4 tsp black pepper
Optional garnish: chopped parsley or chives
Directions
Prep quinoa: Rinse quinoa thoroughly under cold water to remove bitterness.
Sauté shallots:
Set Instant Pot to Sauté mode.
Add olive oil and sliced shallots.
Cook 3-4 minutes until softened and lightly golden.
Season with a pinch of salt and pepper.
Press Cancel to stop sauté mode.
Add quinoa & broth: Stir in rinsed quinoa, then pour in bone broth. Mix gently to combine with shallots.
Cook:
Close lid and set valve to Sealing.
Select Rice setting (usually ~12 minutes at low pressure).
Allow natural release for 10 minutes, then quick release any remaining pressure.
Fluff & serve: Open lid, fluff quinoa with a fork, and taste for seasoning. Garnish with fresh herbs if desired.
