BONE BROTH QUINOA




Ingredients

  • 1 cup quinoa (rinsed well)

  • 2 cups grass-fed bone broth (chicken or beef)

  • 2 medium shallots, thinly sliced

  • 1 tbsp olive oil (or ghee)

  • 1/2 tsp sea salt (adjust to taste)

  • 1/4 tsp black pepper

  • Optional garnish: chopped parsley or chives


Directions

  1. Prep quinoa: Rinse quinoa thoroughly under cold water to remove bitterness.

  2. Sauté shallots:

    1. Set Instant Pot to Sauté mode.

    2. Add olive oil and sliced shallots.

    3. Cook 3-4 minutes until softened and lightly golden.

    4. Season with a pinch of salt and pepper.

    5. Press Cancel to stop sauté mode.

  3. Add quinoa & broth: Stir in rinsed quinoa, then pour in bone broth. Mix gently to combine with shallots.

  4. Cook:

    1. Close lid and set valve to Sealing.

    2. Select Rice setting (usually ~12 minutes at low pressure).

    3. Allow natural release for 10 minutes, then quick release any remaining pressure.

  5. Fluff & serve: Open lid, fluff quinoa with a fork, and taste for seasoning. Garnish with fresh herbs if desired.
