BANANA PROTEIN PANCAKES

Ingredients
1 ripe banana
2 pasture raised eggs
1 scoop protein powder (I like Just Ingredients - Vanilla Bean, French Vanilla, or Snickerdoodle will work great!)
Directions
Mash the banana in a bowl until mostly smooth.
Whisk in the eggs until fully combined.
Add protein powder and mix until smooth (a blender works great).
Heat a non-stick pan over medium-low and lightly grease with grass-fed butter or coconut oil.
Pour small pancakes (they're delicate).
Cook 1-2 minutes per side, flipping gently once bubbles form and edges set.
Tips for best texture
Use very ripe bananas (sweet + binds better)
Keep pancakes small so they flip easily
If batter seems too thick, let it rest for 1-2 minutes
If too thin, add a pinch more protein powder
Optional serving ideas
Warm banana slices on top
Coconut butter, melted and drizzled
Drizzle nut butter or raw nuts
Sprinkle cinnamon
Sprinkle cacao nibs
