Mayo

Ingredients

  • 1 1/2 cup avocado oil

  • 1/2 lemon, juiced

  • 1 large egg

  • 1 tsp ground mustard powder

  • Salt and pepper to taste


Directions

  1. Add the avocado oil, lemon juice, mustard powder, salt and pepper to a wide-mouth mason jar or large glass container.

  2. Place the immersion blender at the very bottom of the jar and turn it on to begin blending.

  3. As the mixture starts to thicken, slowly raise the blender upward to ensure the ingredients emulsify evenly from bottom to top.

  4. Continue blending until the mayo is smooth and creamy throughout. This usually takes about 1 minute.

  5. Taste and adjust seasoning as needed. Add extra salt or lemon juice to balance, and incorporate fresh herbs if desired for added flavor.
